What they perhaps should have been doing was very short two frame bursts in shutter speed mode followed by a change in the shutter speed in order to get the props looking as good as possible Spray and pray mode works very well when shooting from moving vehicles or on moving subjects, aircraft included, because who knows, the pilot could be waving, single frame wouldn't work too well on Mach ...

I would recommend anything by John Shaw, in particular Field Guide for nature photographers, or something like that. I have it somewhere, and I used to read it every few days, and then stop for awhile, and go back to it again, learning something each time. I also have his book Close-ups in Nature.
