My Mate has a Canon 5D and gets way better colour saturation than i do with my D70s, what is the reason for this? is it just the sensor used in the 5D is bigger and better quality, higher sensitivity or could it just be the coating used on Canon 'L' glass?

Assuming you're both shooting raw, then it is most likely to be down to differences in your individual post-production workflows. Have you tried swapping raw files with him to eliminate this variable?

Another possibility is differences in exposure, whether due to different metering techniques, using different metering modes, or just differences in the EVs selected by the two cameras despite everything else being the same.
