I'm hungry and just about to tuck into a sausage sandwich which reminded me of an incident last night. Whilst cooking the sausages on the lean mean fat reducing ... blah blah I noticed a sausage fall off, odd I thought but put it back on, only for it to be pushed off again by its mates, I noticed my sausages were growing and pushing the runt off the grill. This never happened before, I always remember sausages shrinking. Got me thinking, what do they put in sausages that makes them swell? Its obviously edible but is it safe, what does it do? I find Meat of any variety extremely expensive but it concerns me that its not just meat and that there are additives in them that could be doing us harm. I heard a news article recently that said because of the overuse of antibiotics in meat production new forms of e coli are occuring and exisiting strains are becoming antibiotic resistent in humans. So whats the choice? Vegetarian? I like meat, I like vegetables but I also want to be safe.

I usually find that I myself get bigger when I eat sausages, but I suppose that's a different matter. ![]()
On a more serious note, K, did the packaging say they were 100% meat sausages? If not, they also contained some kind of filler. Fillers can be cereals, oatmeal, rice flour, etc. See here for more info. What if the manufacturer put in some kind of self-raising flour as a filler?
