Windows mail - changing the name the recipient sees..

I've done this before but have forgotten how - right now, when I send a message, the recipient will see that the message comes from 'Jamie Emerson'. How do I change this to 'Emerson Photography'?

Spent half an hour trying to do this with no joy......... Any help gratefully received, thanks.

Don't know if it works the same but on Yahoo I created a 'disposable' account with another name, when on 'compose' there is a drop down box where your address is that gives the choice of accounts to send it from ...

Disposables are great.
I use them for online shopping, different one for each company.
