Fair fa' your honest, sonsie face,
Great chieftain o' the pudding-race!
Aboon them a' yet tak your place,
Painch, tripe, or thairm:
Weel are ye wordy o'a grace
As lang's my arm.

The groaning trencher there ye fill,
Your hurdies like a distant hill,
Your pin was help to mend a mill
In time o'need,
While thro' your pores the dews distil
Like amber bead.

His knife see rustic Labour dight,
An' cut you up wi' ready sleight,
Trenching your gushing entrails bright,
Like ony ditch;
And then, O what a glorious sight,
Warm-reekin', rich!

Then, horn for horn, they stretch an' strive:
Deil tak the hindmost! on they drive,
Till a' their weel-swall'd kytes belyve
Are bent like drums;
Then auld Guidman, maist like to rive,
Bethankit! hums.

Is there that owre his French ragout
Or olio that wad staw a sow,
Or fricassee wad make her spew
Wi' perfect sconner,
Looks down wi' sneering, scornfu' view
On sic a dinner?

Poor devil! see him owre his trash,
As feckles as wither'd rash,
His spindle shank, a guid whip-lash;
His nieve a nit;
Thro' blody flood or field to dash,
O how unfit!

But mark the Rustic, haggis-fed,
The trembling earth resounds his tread.
Clap in his walie nieve a blade,
He'll mak it whissle;
An' legs an' arms, an' hands will sned,
Like taps o' trissle.

Ye Pow'rs, wha mak mankind your care,
And dish them out their bill o' fare,
Auld Scotland wants nae skinking ware
That jaups in luggies;
But, if ye wish her gratefu' prayer
Gie her a haggis!

Happy Burns Day to all! Enjoy yer Haggis wi' neeps 'n tatties and a wee dram!
Cheers,
Johanna

A vote for Burns! We'll be doing this for half the street this evening, I have the neeps and tatties cooking even as I type; I have one neighbour detailed to make the broth, another is doing cranachan...
Not sure that there's going to be time to take any pictures though. You could have corrected the poor lady's red eyes though!

Some hae meat and canna eat,
And some wad eat that want it,
But we hae meat and we can eat,
And sae the Lord be thankit.

(The Selkirk grace)

Our 'rustic Labour' is also actually a labouress: Moira is safer than me with a carving knife especially when I am piping in the haggis and delivering the Ode . . .

If I had to cut the haggis Moira would be

Gathering her brows like gathering storm
And nursing her wrath to keep it warm

Happy Burns' Night Johanna!!!

Regards
Bill

She's cut a gaping hole in it. I've never tasted it. But it seems a fun celebration......Sandy

@Moira: I decided to leave Betty with her red eyes, thought she looked more fierce - as she is a soft-soul! Smile
@Ann: How can you say you don't like haggis, if you haven't tried it? You missed something in your life! Tongue

Had lunch uptown today, and this week on the menu in the pub they've had haggis, tatties and neeps or highland burger. I had the burger, which was in a bun with haggis layered on top of the burger, and onion rings on top of that...it was delicious! Smile
A super capture here, Johanna, and that lady looks to have had great pleasure in stabbing the haggis to death! Wink

The big burns night supper in The Globe at Dumrfies has been cancelled due to bad weather. A nice tribute Johanna.

So sorry to be so late getting to this fine tribute Johanna, I should have known you'd have something for the occasion, my own contribution pales in comparison.
Gude pity me, I'm little!
For though I am an elf o' mettle,
And can like onie wabster's shuttle
Jink there or here,
Yet, scarce as lang's a guid kail-whittle,
I'm unco queer
