my former head chef and student class mate ( and long time friend)chef Micheal Thomas of fleva restaurant (formally), dressing up one of his delightful evening specials. in this image the dish is baked fillet of hake with braised chicory, vanilla mashed potato and a frothy lemon cream...

could do nothing about the burn out on his hand or the garnish on the 2nd dish as it was a grab shot and was lucky to get this but i love the concentration and the detail in his hands..

also the 2nd dish to the left is a fillet of beef on a braised oxtail potato cake, with brandy pepper cream topped with beetroot cress

Very good study of everyday life and good processing but for me the Docket hanging above the Chef is not part of the Image and detracts from what it's about?
Would advise Cloning this out and seeing the vast improvement...

hi rick thanks for the comment..
i had heavily cropped it already to take out the heat lamps above as they added a distraction..
i left the docket in as it was just the way we worked there and it was to mark for the order that the food was being produced... i take the point that it does not add that to a viewer as it look like a dead white sheet with no info, but thats is how we put our orders when serving sometimes 180 people on a service in a shoe box kitchen..Smile

The explanation gives a better feel to the Image but still think a little clone would be an alternative to a further Crop... But hey just an observation on a terrific view and at the end of a very busy day as you say, it's your work and that's got to hold true!
