To IS or not to IS
I use IS if the subject is static, like a building, and I've zoomed out quite a long way. I turn it off for candids and street otherwise you miss the moment while waiting for the IS to settle.

D700 or D7000?
Have you tried the Sigma 24-70 2.8 on the D7000 yet? I have an older model of this lens which works fine with my Fuji S5 Pro and worked fine with my D300s, I had to sell the D300s last year and eventually replaced it with a D7000 but the Sigma lens won't work with the camera, when I put the 28-70 lens on the camera won't turn on, no error messages or anything. I've spoken to Sigma who want £50 ...

What Lenses for Wedding Photography?
Last wedding I shot entirely on 24-120mm VR, apart from pictures of the speeches, where I used a 50mm f/1.4. I don't think I shot anything longer than 70-80mm. A perfect combo for the day, so I second a 24-120 Nikkor. Nick

Upgrade from D3100
Darran, You are correct in as much as some of the control options on the D3100 are buried in the menu compared to the D7000. However in the "realworld" I dont find this a problem, my only problem is I ocasionally go to change a setting and momentarily forget which camera I am using. As I said in my original reply to Roger I find no noticeable improvement in IQ between them so if ...

Buying a new Nikon
If the uograde is going to be your only camera body, you need to think carefully about the intended use. The D200 is a excellent camera - I bought one for walkabout use - and it takes practically any Nikon lens including the old MF lenses. The downside is that the high ISO performance of all "2 series" Nikons is lamentable when compared with even the cheapest new model. But it's also excel...

What will Canon do about the D800?
Pixel binning will allow the user to have the benefits of very high resolution or very low noise depending on their requirements. I think this may be the basis on which the 41Mp Nokia sensor for camera phones will be operating. As there is no optical zoom, resolution will be reduced when you use the digital zoom, thereby keeping the noise level the same and you will still get a decent photo...
