What do people have against EVF...?
For me it is a case of apples and oranges, EVF can be useful. I have Canon slrs and as a walk about an Olympus EPL1 with a VF3 EVF. Advice re action photography please
I agree there. What many people don't stop to think about is that if you are wanting to freeze fast action (in fact it doesn't have to be particualry fast for this to apply), the necessary shutter speed is often way into territory where VR is not necessary.

Tripod heads
I use a Acratech GP ballhead. it is Arca Swiss compatible with a lip on the plate, this helps prevent the camera from rotating on the plate. A ballhead is faster to set up and give you much more range of motion. I have had many of my student complain about the joystick style ballhead. they tend not to support heavier camera set ups and tend to slip at certain angles. I would just invest in a go...

But, there's always the window to look through as a re-assuring backup. As a passenger I wouldn't like the idea of 'no window backup'. But we are losing 'focus' again and the post is becoming 'coloured' again !! Then, maybe that's reasons to have an OVF ?

Choosing the right tripod head
Well I personally love my giottos ballhead, its quite light, very well made and very sturdy. Pan-&-Tilt or Ballhead
Do yourself a favour and buy a geared head Yup.. my favourite too.. no "creep/wilt/droop" as with a ball head (okay, maybe pretty expensive ones don't..) and no sticky-out handles as with pan/tilt types. You can adjust it rapidly/coarsely, then finely adjust it..love it...

I can confirm from bitter experience that the sigma 18-200 cannot be used on a tripod with OS running. so i guess the sigmas do not have such high technology incorporated Phil ..although I see in yesterdays News that Nikon are sueing Sigma for megabucks for allegedly "stealing" their intellectual property on image stabilisation.
