Capparis spinosa, or caper, also called Flinders rose, is a perennial winter-deciduous plant that bears rounded, fleshy leaves and large white to pinkish-white flowers. The plant is best known for the edible flower buds (capers), often used as a seasoning, and the fruit (caper berry), both of which are usually consumed pickled. Other species of Capparis are also picked along with C. spinosa for their buds or fruits. Other parts of Capparis plants are used in the manufacture of medicines and cosmetics. The caper bush grows as a low mounding shrub to 2-3 ft tall with arching red stems and dark green, semi-succulent round leaves. From May until September plants bear a profusion of flower buds, which are the edible capers of commerce. Left unpicked these buds form delicately scented pinkish-white flowers, adorned with long lavender stamens, that open at dawn and close late in the afternoon.
