After the peace and quiet of the Confucius Temple (see my previous up-loads) , the night market in Tainan is a real experience. Imagine the atmosphere of a fairground with crowds walking around eating all sorts of food. Everything is fresh (fish, sea food, meat, vegetable, steamed stuffed dumplings, fruit …) and all the dishes are prepared in front of you from soup to squid on a stick and anything you did not know which could be eaten but were afraid to ask.
To open you appetite you have the smells of wonderful cooking but on the other hand you can be put off by the weird odour of the “stinky tofu”. You can drink some marvellous coconut milk or fruit teas made with fresh mangoes. Each stall has its own speciality and the stall holder is a master in cooking that dish.
The place is busy. People smile at you and greet you with “ welcome to Taiwan! Where are you from? Why do you come here? ..etc…” and in no time you are eating new things with new friends. Wonderful.
When we stopped to eat at this stall I was fascinated by the skill of the cook in his use of the spatulas and the speed at he cooked everything while you are sitting in front of a big and hot sheet of metal. When cooked the food is place in front of you and will remain hot while you are mastering the use the chopsticks and trying not to lose too much of your meal.

I ate on two occasions at this food stall as well as many other "street restaurants" in Taiwan and Vietnam and survived without ill effects + had great and tasty food.
I ate once in a restaurant in the UK and got hepatis A. The "roadside food poisoning outlet" is not necessarily in far away countries.
