In answer to your question about RAW and JPEG - I prefer to use RAW images because there is more information in the picture than a JPEG eg. the same image for a 10Mp RAW image would be compressed to 3Mp in JPEG and the initial processing tends to be cleaner using RAW. The RAW software on PS is pretty good and provides a lot of tools to fine tune your image without being destructive - the newer your PS version the more tools are available. If you are using a DSLR then you can use your Canon RAW software that came on the discs - though Canons is not the best. I prefer to use PS versions as the workflow is easier using one program. Give it go and see how you fare with it.
PS Some might well disagree but I think better images are acheived using RAW images.
Ive photographed our local population of Red Squirrels for several years (observed them most of my life) and have never seen a baby one; this is a real beauty. Love the composition and presentation
