I shot this a couple of months ago and, just before you wrote, I was exactly wondering: 'why "just" f/8?'

one thing I remember was I couldn't get them in the same plane or the background wouldn't be as neutral. Anyway...

I know what you mean, I can pick a hundred of my shots that suffer in terms of DOF. I often kick myself afterwards. Nevertheless, I like the work you've put in.
