On holiday this year, went to Penzance, had taken this on some what windy day

I can see that you thought about your composition here, using the large rock as foreground interest, with the sea spray on the left. You have good detail on the rock texture and have captured the spray in full force, holding the exposure well. You have a very plain sky, so a crop to the top would be a good idea, and also a little from either side, to bring the focus of attention on the wave. Try to have two thirds sea and one third sky on the vertical. The rock onto which the wave is splashing is a bit dark, but could be lifted using the shadows/highlights option in editing. When shooting this, you could have taken your camera down a bit to avoid so much plain sky and include some more rocks in the foreground.
