Digital stuff noise

i know a lot about photography but know nothing about all this digital stuff so please help.
i have a sony hx 300
i have an option in the camera to reduce noise. why wouldn't everyone want the least noise as possible.
would i be correct in thinking that by selecting the lowest noise possible i will lose something somewhere else ???
why wouldn't everyone select the lowest noise setting possible so why does the camera give other options,

If you reduce digital noise then you start losing detail. The more you reduce the noise, the more detail is lost.

Not everyone wants lowest possible noise. Some photographers like the look of noise and/or grain - it' their style.

Some noise reduction methods are far superior to others. I think some algorithms clone good pixels to cover noisy
Many people shoot raw and apply noise reduction later, you can do this with JPEG too.
Used with portraits, heavy noise reduction helps to reduce one of the seven signs of ageing by making skin look softer

the camera I have shoots in jpeg only
