From the same artist's garden on Hornby Island, in the Canadian temperate rainforest, this artichoke is probably closer to those that most of us eat (that is those of us who do eat artichokes). I have often wondered how people discovered that artichokes are good to eat, and how. This is not immediately obvious. I like them with a dressing of mayonaise with some garlic crushed in, and a bit of balsamic vinegar, all mixed together to dip the ends in after cooking. My wife has tried steaming them. I think it works better (at least with artichokes, if no other vegetable) to boil them.
