Another Artichoke

From the same artist's garden on Hornby Island, in the Canadian temperate rainforest, this artichoke is probably closer to those that most of us eat (that is those of us who do eat artichokes). I have often wondered how people discovered that artichokes are good to eat, and how. This is not immediately obvious. I like them with a dressing of mayonaise with some garlic crushed in, and a bit of balsamic vinegar, all mixed together to dip the ends in after cooking. My wife has tried steaming them. I think it works better (at least with artichokes, if no other vegetable) to boil them.

Lovely, detailed image. After seeing this I think I'll contact the gardener in Spain to see if we can grow artichokes there.
I cult the stem short, and boil them for an hour or so.....until when you pull off a "leaf" (actually a petal), and taste it, the bottom part of the leaf comes off soft in your teeth. That is the part you eat. The rest of the leaf is not particularly edible. The heart, at the center, is the final prize.

I have not eaten these in quite some time, When we did It was melted butter, lemon juice and probably a bit of garlic sauce-- delicious!
