Christmas Meringue

It's been quite a while since I last uploaded here! I hope everyone's been doing ok Smile

This is one of my Christmas tree meringues which I made today for no particular reason except that I wanted to. Grin Easy and fun to make, they're pretty tasty, too! Made with icing sugar rather than castor and egg whites, whisked in a bowl over simmering water. It makes a really thick meringue which holds its shape when piped. I dyed the mixture green with food colouring (although it's more green inside, which is weird - it's quite pale on the outside!) and decorated with melted chocolate and regal ice when cool.

I know it's rather flat lighting, but when I tried more dramatic lighting it seemed to lose something. I'll try and remember to upload a differently-lit version tomorrow.
