Elephant Ear Fish

This was part of a meal we had in The Mekong Delta, Vietnam. It is eaten rather like crispy duck in Chinese cuisine. It was brought to the table like this, propped up on the plate. The waiter then de-boned it and we ate it on thin pancakes with a spicy sauce - delicious!!!
