The pebbles are, I think, flints. They were used in various parts of the country - incredibly hard stones, set in mortar. More often they were knapped - split open - for more decorative effect. But that wasn't done here.
As well as the flint this was typical vernacular building using whatever was available, including recycled material. Roman remains were a useful source of dressed stone and also bricks... The laundry building is a more recent brick construction on top of medieval foundations.
