Frittula, a delicacy in Palermo, Siciliy, which is famous for its street food. Frittula is made from unidentified bits of waste calf and like most of the street food, popular with the poor. Served by hand from a basket covered with cloth onto grease proof paper or a bread roll with a squeeze of lemon. Some of the other delicacies on offer were more appetising. I must admit, I had a piece of this and just couldn't eat it, my wife ate the lot!
