could do nothing about the burn out on his hand or the garnish on the 2nd dish as it was a grab shot and was lucky to get this but i love the concentration and the detail in his hands..
also the 2nd dish to the left is a fillet of beef on a braised oxtail potato cake, with brandy pepper cream topped with beetroot cress
