Excellent street capture & portrait.......very difficult to capture white hair against a light background, this is where I would (in my humble opionion) position myself & camera or walk around the subject to choose a darker background. Sometimes it is "rude" to ask the subject mostly strangers to position or pose for you, so it is best for the photographer to do the footwork. Again, excellent capture Cyril. 
I am a big fan of black and white but I prefer the colour version as the blue colour of the scarf adds some vibrancy, which suits the colourful character of artists.

As a busker, he is bound to be a colourful character, so for me, the colour version represents the person more than the b&w
I have to say I like both versions you have captured this gentleman beautifully
