You are spot on with the sky replacements I tried - none worked except a milky way one. While still looking fake it had some appeal.
The 'arcs' in the sky came out after applying the Nik filter (a high contrast one) but I though they framed the structure so didn't back them out.

The sun was creating a very shaded are inside the tunnel of the wooden trellis.
If you enlarge the small triangle at the end of the tunnel (a lot, really a lot) there is the dark sea area to the bottom of the wooden trellises, then the area above has two sections (not that distinct...) The transition is about halfway up the diagonals of the triangle.
I not quite able to alter sea levels yet.
