It will bee difficult to get those highlights back Donna as all the detail has gone and the whites are completely burned out.If possible when the lighting id Difficult and the sun is so bright try to take your camera reading from the whitest part. It is easier to get something out of the darker areas that those which are pure white.
You will no doubt get there and the main purpose of taking these photographs is that you enjoy it and keep pursuing your hobby.

Hi Donna how are you doing? OK I think you need to be brave with this bg issue here - I think I would clone from another part of the picture entirely using the fuzzy ball (one of the pre-sets in PSP) you will also need to turn down the opacity to about 45 otherwise you will just clone a neat circle.
The only other thing I guess you could try here is the much neglected air brush - again a well turned down opacity and work at a very high magnification aiming just to take the edge off the light areas. Keep using the eye dropper to pick up colour changes as you work (otherwise you end up with block solid colour which never looks very convincing).
The other thing you could try doing is press the button that says 'return to location and shoot again' (not sure what this is on PS!!). This never works for me because everything is different second time around - but you may have better luck.
