For birds in flight usually f4 may be f5.6 is the highest you need to go. This will help ramp up your shutter speed and enable you to set a lower ISO. I would use AV priority and not shutter speed. I think you should start with as low an f number as possible and see what that gives you.

The Grand Canal, Venice, ItalyHi Jonathan. Moody shot, but I think if you'd set the speed to 8 secs or more and the apature to F10 or higher, then the depth of field would have been increased and the buildings would be in focus, andthe water soft as it's moving. If you don't have tripod with you then often a post or railing can be very useful as a steady platform.
