With your choice of subject Angie, I wouldn't worry too much about what the horizon was doing, it is very easy to correct this after the event in post.
Not sure if a tripod would help considering the way your subject suddenly appear then vanish, unlike shooting BiF, where one usually has a flight path to follow before exposing.
With Dolphins, etc, I would use the camera like a shotgun and correct any "errors" afterwards when processing the image. You are very lucky having these beautiful creatures on your doorstep
