I thought the cows are there to complete the circle. They were there in the stable when Christ was born, they are here too at His end.
"Peace' is a weird word to find on a cross.
INBI or INRI would be more common. Cross is a place of martyrdom, a symbol of Jesus' sacrifice and love for the humankind, not peace. Unless the priest ordering it was a stoned hippy once. Remember the helmet of the "Full Metal Jacket" with the Peace symbol pin? That looked more in place pinned on it.
I would not shoot the messenger, so please do not think my words is turned against you.
