Tofu and Dumplings

Grilled vegetarian dumplings served on a mix of lightly stir fried shredded courgette, carrot, leeks and thinly sliced red peppers. Accompanied by a soup made with a white miso paste, vegetable stock and a shot of Mirin. added to the soup some firm tofu, udon noodles, thinly sliced onion, thinly sliced red pepper and to finish it off a little seaweed and a light soy sauce. ( light soy for flavor - dark soy for colour and flavor)
For those non veggies - this works just as well with pork dumplings or duck and hoisin sauce dumplings. Prawns or any white fish can be used instead of the tofu Basa fillets work well as long as you cook the soup over a low heat, let it boil and they tend to break up and its a bit mushy.
